Treat yourself to one of Ireland's most delicious exports and some of the world's most heavenly desserts!

Personally, I highly recommend having a bottle of genuine Baileys Irish Cream liqueur on hand at all times. :)

But if your budget's a wee bit too tight to do that right now, don't fret!

I have a recipe you can use to make your own homemade Baileys Irish Cream and come pretty darn close to the real thing!

Of course, the main ingredient of Baileys is Irish Whiskey, which is an even more expensive import. But if you have authentic Irish Whiskey on-hand anyway, here's how to make your own homemade Baileys Irish Cream...

Homemade Baileys Irish Cream

Ingredients:

  • 1 cup Irish whiskey
  • 1 can Eagle brand condensed milk
  • 3 eggs
  • 1 tablespoon Hershey's chocolate syrup
  • 1 tablespoon vanilla

Blend and refrigerate.

This recipe should be kept refrigerated, and shaken well before serving if it has been allowed to sit for a while. You should also be aware that because of the eggs, it only stays fresh for a few days.

So drink up while it's fresh!

Fantasy Ireland Celtic Knot Divider

Once you have your cream liqueur ready, treat yourself to these easy and delicious Baileys Irish Cream recipes:

Irish Cream Fudge

Ingredients:

  • 2-12oz. packages of milk chocolate chips
  • 1-12oz. package semisweet chocolate chips
  • 2-7oz. jars of marshmallow cream
  • 2 teaspoons of vanilla extract
  • 2/3 cups of Irish Cream (Baileys or homemade)
  • 2 cups of chopped nuts (optional)
  • 4 1/2 cups of granulated sugar
  • 1-12oz. can of evaporated milk
  • 1/2 pound of butter, softened

Directions:

In a very large bowl, combine the milk chocolate chips, semisweet chocolate chips, marshmallow cream, vanilla extract, Irish Cream, and nuts (if you are adding them). Set this mixture aside.

Line a 10 X 15 baking pan with foil and spread lightly with butter or margarine.

In a medium saucepan, combine granulated sugar, evaporated milk, and butter. Bring to a gentle boil over medium heat and cook slowly, stirring constantly for about 10 minutes.

Pour the milk mixture into the the chocolate chip mixture. Stir slowly by hand to combine. It is very important to do this by hand and NOT use any kind of mixer.

Pour the fudge into the prepared pan and chill until set.

Fantasy Ireland Celtic Knot Divider

Baileys Irish Cream Cake

Ingredients:

CAKE:

  • 1 yellow cake mix
  • 4 eggs
  • 1/2 cup cold water
  • 1/2 cup Baileys Irish Cream liqueur
  • 1 package instant vanilla pudding mix
  • 1/2 cup vegetable or canola oil
  • 1 cup chopped pecans (optional)

    GLAZE:

    • 2 oz melted butter
    • 1/2 cup sugar
    • 1/8 cup water
    • 1/4 cup Baileys Irish Cream liqueur

    Directions:

    Mix all the ingredients together, except the nuts, until well-blended. Then stir in the pecans gradually.

    Pour cake mixture into greased and floured 12 cup bundt pan and bake at 325° F for 1 hour or until it tests done.

    Heat glaze ingredients until melted. Poke holes in cake with meat fork and brush warm cake with half the glaze mixture.

    Cool cake for 15 minutes and then turn out onto rack. When cake has cooled, brush with remaining glaze mixture.

    Makes 8 servings.

    Fantasy Ireland Celtic Knot Divider

    Baileys Irish Cream Mousse Pie

    Ingredients:

    • 3 eggs, separated
    • 3/4 cup Baileys Irish Cream liqueur
    • 1 cup chopped walnuts (optional)
    • 1/8 tsp. salt
    • 2 cups Cool-Whip
    • 2 tablespoons shaved semi-sweet chocolate

    Directions:

    Beat egg yolks thoroughly. Add salt and Baileys. Stir thoroughly.

    Cook in top of double boiler until yolk mixture thickens. Cool. Beat egg whites until stiff.

    Combine egg/Baileys mixture, egg whites, and 2/3 of Cool-Whip, using a folding motion. Fold in 3/4 cup of the chopped nuts. Scrape into a baked pie shell. Cover with remaining Cool-Whip. Sprinkle with remaining chopped nuts and chocolate shavings.

    Chill for at least 4 hours before serving.

    Makes 4 servings.

    Fantasy Ireland Celtic Knot Divider

    Baileys Chocolate Mousse Pie

    Ingredients:

    • 6 ounces ready-made pie crust (graham or chocolate)
    • 1 package unflavored gelatin (envelope)
    • 1 teaspoon vanilla
    • 3/4 cup milk
    • 3/4 cup Baileys Irish Cream liqueur
    • 6 ounces semisweet chocolate chips
    • 2 cups frozen Cool-Whip

    Directions:

    In saucepan, sprinkle unflavored gelatin over milk. Let stand about 1 minute.

    Stir over low heat until gelatin is dissolved, about 5 minutes. Add chocolate and continue cooking, stirring constantly until chocolate is melted. Stir in vanilla.

    Remove from heat and stir occasionally, adding Baileys about five minutes after removal from heat. When mixture forms mounds when dropped from spoon, fold in whipped topping. Turn into crust.

    Chill for at least 4 hours before serving.

    Baileys Irish Cream Truffles

    Ingredients:

    • 12 oz semi-sweet chocolate morsels
    • 1/4 cup heavy whipping cream
    • 1 teaspoon vanilla
    • 1 tablespoon sweet butter
    • 2 egg yolks
    • 1/4 cup Baileys Irish Cream liqueur

    Directions:

    Melt chocolate, Baileys and heavy cream together over very low heat.

    Whisk in yolks, one at a time; mixture will thicken. Whisk in butter.

    Refrigerate overnight, or until firm.

    With spoon make small balls. Roll in powdered sugar, cocoa, chopped nuts, sprinkles, etc.

    Makes 16 servings.
